Boiled or steamed:
- Boil (salted) water, add veggies to pan or steamer.
- Check for doneness.
- Drain and add lemon juice, butter, olive oil, salt and butter, herbs, or other seasonings.
Sautéed:
- Put a film of olive oil in bottom of skillet.
- When hot, add veggies and salt and pepper.
- Stir once in a while.
- Check for doneness.
- Add seasonings.
Roasted:
- Preheat oven to 425.
- Put vegetables in a bowl and toss with 3 T or more of oil plus salt and pepper.
- Put them on roasting pan or rimmed baking sheet. Roast for 15-45 minutes?
- Check for doneness.
- Add seasonings.
Grilled or broiled:
- Heat broiler with rack 4 inches from heat.
- Put vegetables in a bowl and toss with 2 T or more of olive oil, plus salt and pepper.
- Put them in a pan under the broiler. Roast 5-20 minutes?
- Turn and rearrange as needed for even cooking.
- Check for doneness.
- Add seasonings.
