Pizza or Bread Dough

  • 1 1/4 c warm water (100-110)
  • 1 pkg active dry yeast (1/4 oz)
  • 3 cups flour
  • 1/2 T salt
  • 1 T oil
  1. Put 1/4 c of the water in a small bowl.
  2. Sprinkle the yeast on top of the water, stir, and cover. Let sit for 10 minutes.
  3. In big bowl, sprinkle salt over flour.
  4. Make a well and pour yeast mixture in. Mix with fork to make a paste.
  5. Add the 1 T oil to the remaining 1 c water.
  6. Add to flour and mix to make soft dough.
  7. On floured surface, punch and knead till soft and elastic.
  8. Lightly oil a bowl, add dough and turn to coat.
  9. Cover with plastic wrap and kitchen towels, put in warm draft-free place till double in size – 1 1/2 hours.

For large pizza:

  1. Lightly oil baking sheet.
  2. Press and pull the dough into 1/4-inch thick pizza base on baking sheet.
  3. Make tiny dents with your fingers.
  4. Add sauce and toppings.

For bread:

  1. Lightly oil 8 1/2 x 4 1/2″ bread pan.
  2. Punch down dough. Knead 4-6 minutes.
  3. Shape dough to fit pan.
  4. Brush a little oil on top.
  5. Cover with plastic wrap or wax paper plus kitchen towels.
  6. Let rise 1 hour.
  7. Preheat oven to 375.
  8. Bake  50-60 minutes.
  9. Cool a few minutes and tip out of pan. Hollow sound when tapped on bottom.
