- head of cauliflower
- 8 T veg oil
- 2 c dry bread crumbs
- 3-5 cloves of garlic
- salt and pepper
- Cut cauliflower into bite-size florets.
- Steam or boil cauliflower until just tender.
- Heat 4 T oil in skillet, add breadcrumbs, cook until crisp.
- Add chopped or thinly sliced garlic, stir a minute.
- Remove bread crumbs from skillet.
- Heat 4 T oil in skillet, and add cauliflower.
- Mash and lightly brown cauliflower.
- Stir in breadcrumbs.
- Season with salt and pepper.
