Cauliflower with Garlic Crumbs

  • head of cauliflower
  • 8 T veg oil
  • 2 c dry bread crumbs
  • 3-5 cloves of garlic
  • salt and pepper
  1. Cut cauliflower into bite-size florets.
  2. Steam or boil cauliflower until just tender.
  3. Heat 4 T oil in skillet, add breadcrumbs, cook until crisp.
  4. Add chopped or thinly sliced garlic, stir a minute.
  5. Remove bread crumbs from skillet.
  6. Heat 4 T oil in skillet, and add cauliflower.
  7. Mash and lightly brown cauliflower.
  8. Stir in  breadcrumbs.
  9. Season with salt and pepper.
