2 lbs ground beef
1 lb ground pork
1 c dried breadcrumbs
1/2 c romano
2 large eggs
1 tsp salt
1/2 tsp pepper
3 T chopped italian parsley
olive oil
combine beef, pork, breadcrumbs, romano, eggs, salt, pepper, parsley. heat a little oil, working in batches pinch off marble-sized meatballs. fry a few minutes each side, till cooked through. drain, repeat. to freeze place cooled balls on baking sheet, freeze 2 or 3 hours, then transfer to freezer bags. store for up to 3 months.
