Flour Tortillas

  • 2 c flour
  • 1/2 t baking powder
  • 1/4 t salt
  • 2 T veg oil
  • 2/3 – 3/4 c warm water
  1. Combine flour, baking powder, salt, oil, and half (1/3 to 3/8 c) the warm water.
  2. Stir, adding more water until dough comes together.
  3. Knead for 5 minutes, till smooth and elastic.
  4. (Optional) Cover and let sit for half-hour or several hours.
  5. Divide into 8 balls.
  6. Form each ball into a disk and roll out as thin as possible = 7-8″ diameter.
  7. Cook one at a time in dry skillet over medium heat until blisters and gets brown spots = about one minute per side.

Makes 8.

Mini-tortillas:

  1. Pinch off 3/4″ balls of dough and flatten with the back of a spatula.
  2. Cook in dry skillet as above.

Makes 50.
