- 1/4 c veg oil
- 2 bell peppers, in strips, or frozen peas/carrots/corn
- salt and pepper
- 3-4 c cooked long-grain rice, chilled for at least a few hours (start with 1 1/2 c raw rice)
- (optional) 1 c cooked fish, chicken, or meat
- 2 T soy sauce
- 1 T dark sesame oil
- Put oil in large skillet over medium-high heat.
- When hot, add peppers, salt, and pepper.
- Raise heat to high and cook, stirring occasionally, till they begin to brown = 10 minutes.
- Add the rice and optional meat. Cook, stirring and breaking up lumps, till rice is hot and starts to brown = 10 minutes.
- Stir in soy sauce and sesame oil.
- Adjust seasonings if needed.
