Fried Rice

  • 1/4 c veg oil
  • 2 bell peppers, in strips, or frozen peas/carrots/corn
  • salt and pepper
  • 3-4 c cooked long-grain rice, chilled for at least a few hours (start with 1 1/2 c raw rice)
  • (optional) 1 c cooked fish, chicken, or meat
  • 2 T soy sauce
  • 1 T dark sesame oil
  1. Put oil in large skillet over medium-high heat.
  2. When hot, add peppers, salt, and pepper.
  3. Raise heat to high and cook, stirring occasionally, till they begin to brown = 10 minutes.
  4. Add the rice and optional meat. Cook, stirring and breaking up lumps, till rice is hot and starts to brown = 10 minutes.
  5. Stir in soy sauce and sesame oil.
  6. Adjust seasonings if needed.
