- 1/2 c soy sauce
- 1/2 c mirin (or 1/4 c honey mixed with 1/4 c water)
- 1 T minced ginger
- 1 clove garlic, minced
- 1/4 c chopped green onions
- Combine soy sauce and mirin over medium-low heat.
- Cook till bubbling = 2 minutes.
- Turn off heat, stir in ginger, garlic, and green onions.
*For mushroom teriyaki sauce, add 1/2 c finely chopped mushrooms before cooking.
*For carmelized onion teriyaki sauce, put 1/2 thinly sliced onion in small saucepan over medium heat. Cover and cook, stirring some, till onion is dry and almost sticking to pan = 10-15 minutes. Add 1 T veg oil and cook till onion browns = 10 minutes. Proceed with recipe.
