Compound Butter

  • 2 T chopped parsley, chervil, cilantro, chinves, dill, or sage, or smaller amounts of tarragon, rosemary, or thyme leaves, or a combination
  • 4 T butter at room temperature
  • salt and pepper
  • juice of 1/2 lemon (optional)
  1. Using fork, cream herbs with butter.
  2. Add salt, plus pepper and lemon juice if you like.

*Some ingredients to use with or instead of the herbs and lemon juice:

  • 2 T chopped green onions
  • 1 T minced ginger
  • 1-2 T honey or minced crystallized ginger
  • 1 t grated citrus zest with 1 T juice
  • 1 T capers, rinsed and mashed, with 1 t minced lemon zest
  • 1 T balsamic vinegar, with 1 T minced green onion if you like
  • 1 t minced garlic
  • mashed 1/2 peach, plum, or pear
  • 1-2 t soy sauce
  • 2 cloves roasted garlic
  • 1 t minced garlic cooked in 1 T butter for 2-3 minutes. Can add 1 t minced ginger (add for last minute of cooking) and a little soy sauce.
  • 2 finely chopped green onions sautéed in 1-2 T butter
  • 3 T chopped nuts sautéed in T or 2 of butter
  • 2 T chopped carrot, cooked in T or 2 of butter until very soft.
  • 2 crumbled pieces of crisp bacon
