Lemon Squares and Variations

Tasty. Makes too much for a 9″ round pan.

  • 1/2 c softened butter plus enough to grease pan
  • 1 3/4 c sugar
  • pinch salt
  • 1 c plus 3 T flour reserved for later
  • 3 eggs
  • 1/4 c lemon juice
  • 1/2 t baking soda
  • grated lemon zest
  • confectioners’ sugar for dusting
  1. Preheat oven to 350. Grease 8-9″ baking pan.
  2. Cream butter with 1/4 c of the sugar plus salt.
  3. Stir in the flour.
  4. Press dry mixture into greased pan, and bake till just turning golden = 20 minutes. Cool slightly.
  5. Beat together eggs, lemon juice, and remaining sugar until light and thick.
  6. Add remaining 3 T flour, baking soda, and zest.
  7. Pour over crust and bake until firm on edges but a little soft in middle = 25-30 minutes.
  8. Cool, dust with confectioners’ sugar.

*For quick jam bars version, omit lemon juice, zest, and baking soda. Combine 1/4 c jam with the eggs.
