- 1 9″ pie crust
- 4 eggs, separated
- 1 14-oz can sweetened condensed milk
- 1/3 c lime juice
- pinch salt
- 1/4 c confectioners’ sugar
- Preheat oven to 350.
- Prebake crust and cool slightly.
- Beat the egg yolks a little, then beat in the milk.
- Beat in lime juice a little at a time.
- Put the pie plate on a baking sheet. Fill warm crust.
- Bake till just firm = 10-15 minutes.
- Cool on a rack 10 minutes.
- Make meringue by beating egg whites with salt till foamy, then gradually adding confectioners’ sugar, continuing to beat till fairly stiff.
- Cover pie to edges with meringue, and bake till lightly browned = 10 minutes.
- Cool on rack. Refrigerate.
