- 1 9″ piecrust
- 4 strips bacon
- 1 onion, thinly sliced
- 1 cup swiss cheese, cubed
- 1/4 c parmesan, grated
- 4 eggs
- 2 c cream, or combo of milk and cream
- 1/4 t nutmeg
- 1/2 t salt
- 1/4 t pepper
- Preheat oven to 400.
- Prebake piecrust = 10 minutes.
- Then remove piecrust and reduce oven to 375.
- Cook bacon till crisp.
- Remove bacon and cook onion in one T of the bacon fat, till transparent.
- Crumble bacon and sprinkle bacon, cheeses, and onion in piecrust.
- Combine eggs, cream, nutmeg, salt, and pepper.
- Set piecrust on baking sheet and pour egg mixture in.
- Bake till clean knife 1″ from edge = 25 minutes.
