Tomato Soup with Greek Yogurt

Serves 4.
• Onions, 1/2 C.
• Garlic, 2 cloves
• Tomatoes, 4
• Olive oil, 1 T.
• Vegetable broth, 2 C.
• Greek yogurt, 1/2 C. plain
• Basil, 2 T. (optional)

1 Chop the onions.
2 Finely chop the garlic.
3 Chop the tomatoes.
4 Heat the olive oil in a skillet.
5 Sauté the onions and garlic until soft.
6 Add the tomatoes.
7 Add the vegetable broth.
8 Simmer for 15 minutes.
9 (optional) If you want a smooth soup, cool and purée in a blender or food processor.
10 Add the Greek yogurt and heat through.
11 (optional) Chop the basil and sprinkle over the soup.
