Chicken Enchiladas

  • 1 T butter
  • 1 onion
  • 3/4 c cooked chicken
  • 2 T green chiles
  • 3 oz cream cheese
  • salt
  • oil
  • 4 flour tortillas
  • 1/3 c cream
  • 1 c cheese
  • chopped green onion
  • lime wedges

  1. Thinly slice onion.
  2. Shred chicken.
  3. Dice chiles.
  4. Dice cream cheese.
  5. Grate cheese.
  6. Preheat oven to 375.
  7. Grease 9 x 13″ pan.
  8. Melt butter over very low heat.
  9. Add onion, cook 20 minutes.
  10. Remove from heat and add chicken, chiles, cream cheese, and salt.
  11. Heat oil in skillet and fry tortillas a few seconds, until limp not crisp.
  12. Drain tortillas on paper towels.
  13. Put filling along center of each tortilla.
  14. Roll up and put seam side down in baking dish.
  15. Pour cream over tortilla tops.
  16. Sprinkle with cheese.
  17. Bake 20 minutes, till heated through.
  18. Garnish with green onions and lime juice.
