- 1 T butter
- 1 onion
- 3/4 c cooked chicken
- 2 T green chiles
- 3 oz cream cheese
- salt
- oil
- 4 flour tortillas
- 1/3 c cream
- 1 c cheese
- chopped green onion
lime wedges
- Thinly slice onion.
- Shred chicken.
- Dice chiles.
- Dice cream cheese.
- Grate cheese.
- Preheat oven to 375.
- Grease 9 x 13″ pan.
- Melt butter over very low heat.
- Add onion, cook 20 minutes.
- Remove from heat and add chicken, chiles, cream cheese, and salt.
- Heat oil in skillet and fry tortillas a few seconds, until limp not crisp.
- Drain tortillas on paper towels.
- Put filling along center of each tortilla.
- Roll up and put seam side down in baking dish.
- Pour cream over tortilla tops.
- Sprinkle with cheese.
- Bake 20 minutes, till heated through.
- Garnish with green onions and lime juice.
