Basic Vegetable Cooking Methods

Boiled or steamed:

  1. Boil (salted) water, add veggies to pan or steamer.
  2. Check for doneness.
  3. Drain and add lemon juice, butter, olive oil, salt and butter, herbs, or other seasonings.

Sautéed:

  1. Put a film of olive oil in bottom of skillet.
  2. When hot, add veggies and salt and pepper.
  3. Stir once in a while.
  4. Check for doneness.
  5. Add seasonings.

Roasted:

  1. Preheat oven to 425.
  2. Put vegetables in a bowl and toss with 3 T or more of oil plus salt and pepper.
  3. Put them on roasting pan or rimmed baking sheet. Roast for 15-45 minutes?
  4. Check for doneness.
  5. Add seasonings.

Grilled or broiled:

  1. Heat broiler with rack 4 inches from heat.
  2. Put vegetables in a bowl and toss with 2 T or more of olive oil, plus salt and pepper.
  3. Put them in a pan under the broiler. Roast 5-20 minutes?
  4. Turn and rearrange as needed for even cooking.
  5. Check for doneness.
  6. Add seasonings.
