Cheesy Black Bean Dip

  • 1 14-oz can black beans, rinsed and drained
  • 1 t veg oil
  • 1 small onion
  • 2 cloves garlic
  • 1 tomato
  • 1/2 c salsa
  • 1/2 t cumin
  • 1/2 t chili powder
  • 1 T lime juice
  • 1 c shredded cheese
  1. Rinse and drain beans. Mash with fork.
  2. Finely chop onion.
  3. Chop tomato.
  4. Crush garlic.
  5. Heat oil and sauté onion and garlic for a few minutes.
  6. Add beans, tomato, salsa, cumin, and chili powder.
  7. Cook 5 minutes, stirring often.
  8. Remove from heat, and stir in lime juice and cheese.
