- 1 14-oz can black beans, rinsed and drained
- 1 t veg oil
- 1 small onion
- 2 cloves garlic
- 1 tomato
- 1/2 c salsa
- 1/2 t cumin
- 1/2 t chili powder
- 1 T lime juice
- 1 c shredded cheese
- Rinse and drain beans. Mash with fork.
- Finely chop onion.
- Chop tomato.
- Crush garlic.
- Heat oil and sauté onion and garlic for a few minutes.
- Add beans, tomato, salsa, cumin, and chili powder.
- Cook 5 minutes, stirring often.
- Remove from heat, and stir in lime juice and cheese.
