- 2 c flour or cake flour
- 1/2 t salt
- 2 t baking powder
- 1/4 c sugar
- 5 T cold butter
- 1 egg
- 1/2 c cream or a little more
- 1/3 c raisins or other (see below)
- Preheat oven to 450.
- Mix dry ingredients. Reserve 1 T of the sugar.
- Cut butter into bits and cut into dry ingredients.
- Beat egg with 1/2 cup cream and fold into dry ingredients.
- Add a few drops more cream if too dry.
- Fold in raisins.
- Knead on floured surface 10 times. It should stick to hands a little.
- Press into 3/4″ thick rectangle. Cut into 2″ rounds.
- Brush tops with a little cream and sprinkle with a little of the remaining 1 T sugar.
- Bake till golden brown = 8-12 minutes.
*Instead of raisins, add 1/2 to 1 c grated cheese, finely chopped nuts or seeds, dried blueberries, cherries, or cranberries (soaked in a little warm water first), 1 T grated citrus zest, or 1 c cooked crumbled sausage (reduce sugar to 1 t for sausage).
