Pot Stickers

  • 1/2 lb ground pork, chicken, or other meat
  • 1/4 c minced green onion
  • 1 c leek, napa cabbage, or bok choy
  • 1 t minced ginger
  • 1 t rice wine or dry sherry
  • 1 t sugar
  • 1 T soy sauce
  • 1 T dark sesame oil
  • 1 egg
  • 1 t pepper
  • large pinch salt
  • 24 wonton or gyoza wrappers
  • veg oil
  1. Mix everything except wrappers.
  2. Put 2 t of filling in center of wrapper, moisten edge and fold (to make semi-circle) and press seam. Press out air.
  3. Put thin layer of oil in big deep skillet, heat on medium-high.
  4. Put in dumplings, seam side up. Do not crowd.
  5. Turn heat to medium. Cover and cook 5 minutes.
  6. Add 1/2 c water, then cover and cook till water evaporates = 3 minutes.
