Pineapple Upside Down Cake

  • 1/2 c unsalted butter, melted
  • 1/2 c brown sugar
  • pineapple slices to cover 9″ round pan
  • 1 c buttermilk
  • 2 eggs
  • 1/2 cup white sugar
  • 2 c flour
  • 1 t baking soda
  • 1/4 t salt
  1. Preheat oven to 350.
  2. Liberally grease 9″ round cake pan or cast iron skillet with 4 T of the butter.
  3. Sprinkle brown sugar over.
  4. Arrange layer of pineapple slices over.
  5. Whisk remaining 4 T butter, buttermilk, eggs, and white sugar together till foamy.
  6. In another bowl, combine flour, baking soda, and salt.
  7. Gradually add egg mix to flour mix and stir.
  8. Spread batter over pineapple.
  9. Bake till top is golden brown and toothpick comes out clean = 50-60 minutes.
  10. Cool for only 5 minutes.
  11. Run a knife around edge and invert cake onto plate.

Plum upside down cake:

  • Use 4 or 5 plums cut into slices or chunks instead of the pineapple.

Apple upside down cake:

  • Use 3 or 4 peeled sliced apples. Add 1 t cinnamon along with the flour.

Berry upside down cake:

  • Use 3-4 cups blackberries, blueberries, or raspberries.
