- 2 c flour
- 1/2 t baking powder
- 1/4 t salt
- 2 T veg oil
- 2/3 – 3/4 c warm water
- Combine flour, baking powder, salt, oil, and half (1/3 to 3/8 c) the warm water.
- Stir, adding more water until dough comes together.
- Knead for 5 minutes, till smooth and elastic.
- (Optional) Cover and let sit for half-hour or several hours.
- Divide into 8 balls.
- Form each ball into a disk and roll out as thin as possible = 7-8″ diameter.
- Cook one at a time in dry skillet over medium heat until blisters and gets brown spots = about one minute per side.
Makes 8.
Mini-tortillas:
- Pinch off 3/4″ balls of dough and flatten with the back of a spatula.
- Cook in dry skillet as above.
