Pancakes with Blueberries / Bananas / Bacon

  • 2 c flour
  • 2 t baking powder
  • 1/2 t salt
  • 1 T sugar (optional)
  • 2 eggs
  • 1 1/2 to 2 c milk
  • 2 T melted and cooled butter (optional)
  • butter or oil for cooking
  1. Heat griddle or skillet over medium-low heat.
  2. Mix dry ingredients.
  3. Beat eggs into milk, add (optional) cooled melted butter.
  4. Stir gently into dry ingredients, just enough to mix. If it seems dry, add a little milk.
  5. Butter/oil the griddle/skillet each time. Ladle batter for whatever size pancakes you want.
  6. Flip when bubbles appear in center and bottoms are cooked.
  7. Cook a couple more minutes till lightly browned.

*Substitute buttermilk, yogurt, sour cream, or sour milk for the milk, and use 1/2 t baking soda instead of the baking powder. Thin with a little milk if needed.

*Blueberry or banana pancakes: Use fresh or frozen (not thawed) blueberries or overripe bananas. Stir berries into batter just before cooking. Slice bananas and press them into surface of cooking pancakes. Cook more slowly, as these burn more easily.

*Bacon pancakes: Spoon batter over pieces of cooked bacon.
