Pan-Fried Cheese

  • 3 T flour
  • 1 t paprika
  • 1/2 lb mild soft sheep’s milk or other cheese, cut into 1/2″ slices (manchego, edam, gouda, provolone, mozzarella, kasseri, or feta)
  • 2 eggs, beaten
  • 1/2 c fine bread crumbs
  • olive or other veg oil for frying
  1. Mix flour and paprika.
  2. Dredge cheese slices in flour mixture, then eggs, then bread crumbs.
  3. (optional) Put on wax paper and refrigerate for an hour or more.
  4. Put 1/8″ or more of oil in heavy skillet over medium-high.
  5. Fry cheese slices till golden brown = 30 seconds.
  6. Turn and brown the other side.
  7. Drain on paper towels.
