- 3 T flour
- 1 t paprika
- 1/2 lb mild soft sheep’s milk or other cheese, cut into 1/2″ slices (manchego, edam, gouda, provolone, mozzarella, kasseri, or feta)
- 2 eggs, beaten
- 1/2 c fine bread crumbs
- olive or other veg oil for frying
- Mix flour and paprika.
- Dredge cheese slices in flour mixture, then eggs, then bread crumbs.
- (optional) Put on wax paper and refrigerate for an hour or more.
- Put 1/8″ or more of oil in heavy skillet over medium-high.
- Fry cheese slices till golden brown = 30 seconds.
- Turn and brown the other side.
- Drain on paper towels.
