Tasty. Makes too much for a 9″ round pan.
- 1/2 c softened butter plus enough to grease pan
- 1 3/4 c sugar
- pinch salt
- 1 c plus 3 T flour reserved for later
- 3 eggs
- 1/4 c lemon juice
- 1/2 t baking soda
- grated lemon zest
- confectioners’ sugar for dusting
- Preheat oven to 350. Grease 8-9″ baking pan.
- Cream butter with 1/4 c of the sugar plus salt.
- Stir in the flour.
- Press dry mixture into greased pan, and bake till just turning golden = 20 minutes. Cool slightly.
- Beat together eggs, lemon juice, and remaining sugar until light and thick.
- Add remaining 3 T flour, baking soda, and zest.
- Pour over crust and bake until firm on edges but a little soft in middle = 25-30 minutes.
- Cool, dust with confectioners’ sugar.
*For quick jam bars version, omit lemon juice, zest, and baking soda. Combine 1/4 c jam with the eggs.
