Breakfast Burritos

  • 2 c refried beans or chili or canned pinto or kidney beans
  • 4 large flour tortillas
  • 6 eggs
  • 2 T butter
  • 1 c grated cheese
  • other fillings, sauces, or garnishes you want*
  1. Warm beans in small pot.
  2. Warm tortillas: wrap in foil, put in 300 oven for 10 minutes.
  3. Heat butter in pan, and scramble the eggs briefly. When nearly done, remove from heat.
  4. Assemble the burritos: Spread cheese, top with beans and eggs, plus any other fillings, sauces, or garnishes you want. Roll up.

*Fill as you would tacos: salsa, chopped tomato, cilantro, black olives, sliced green onions, chopped chiles, avocado slices, cooked bacon, sausage or ground meat, crisp panfried potatoes….

*Can assemble wrap in foil and freeze. Reheat at 350 for 20 minutes.
